1 kg (2.2 lbs) potatoes (Yukon Gold or Russet preferred)
100 g (7 tbsp) unsalted butter
150 ml (2/3 cup) whole milk (warm)
Salt to taste
White pepper to taste
Optional: a pinch of nutmeg or garlic for extra flavor
Peel and cut the potatoes into even chunks.
Place them in a large pot, cover with cold salted water, and bring to a boil.
Reduce to a simmer and cook for 15–20 minutes, or until fork-tender.
Drain the potatoes well and return them to the pot.
Mash using a potato ricer or masher until smooth.
Stir in butter until melted and incorporated.
Gradually add the warm milk, mixing until the purée is creamy and smooth.
Season with salt, white pepper, and optional nutmeg or garlic.
Serve warm, garnished with herbs if desired
For ultra-smooth texture, use a potato ricer or food mill.
Substitute cream for milk if you prefer a richer purée.
Reheats well; just stir in a bit more milk when warming.
